Today’s blog will provide some ideas for making two snacks with some of your leftovers from Christmas. If you have any turkey, ham, cheese (brie, camembert and other blue cheeses or cheddar would be ideal) and other cold cuts. You will need a pack of puff pastry (for ease the ready rolled version is best), bread wraps, tomatoes and salad leaves.
Pre- heat the oven to 180 degrees. Roll out the pastry to 3mm thickness. Cut into 4 cm squares or into a larger 10 cm square and place on baking sheet. Partially bake until risen and slightly brown. Dice turkey and ham and other cold cuts that you might have. Slice cheese into small 2 cm pieces. Spread cranberry sauce on each pastry square, place a small amount of meat on top and then cover with cheese. Bake in the oven for approximately 10 minutes or until cheese has melted and starts to turn brown. This is a delicious appertiser or lunch dish which can be enjoyed with a side salad.
The following is a no cook recipe which even the children enjoy. I like to use a multi seeded wrap so there is more texture. Chop some salad leaves and tomatoes. Cup a in two. Spread thinly mayonnaise on half the wrap (starting from the bigger end) and on the remaining part a small amount of cranberry sauce. Sprinkle chopped turkey down the long side with tomatoes and salad leaves. Roll it carefully and then cut into smaller pieces to enjoy.
