Main Course Recipe Ideas to use up turkey leftover from your Christmas lunch

Turkey is a fabulous low fat protein. It can be quite dry eaten on its own but add an interesting sauce and it becomes a very tasty option in place of chicken.

 Here are 3 ideas for recipes to use up your leftover turkey.

  1. Coronation turkey- using any turkey leftover dice and then stir into a home made coronation sauce. The sauce contains mayonnaise, curry powder, chopped spicy mango chutney and salt and pepper. The coronation turkey is great as a sandwich filling or a topping for a jacket potato.
  2. Turkey and mushroom pie (for 4) – you will need a pack of ready rolled puff pastry, 200 gms mushrooms, 1 onion roughly chopped, 400 to 500 gms diced cooked turkey, 400 ml of white sauce and salt and pepper. Make up the white sauce. Wash and slice the mushroom and when cooked through add mushrooms and any liquid to the white sauce. Fry the chopped onion in olive oil and when browned add to the white sauce. Add diced turkey to the white sauce and stir well. Pre heat oven to 180 degrees. Pour the turkey and mushroom mixture into a 2 litre baking dish. Place the ready rolled puff pastry over the dish and cut so that it fits just inside the dish. Paint the top with milk. Bake in the oven for 20 to 25 minutes until the pastry is golden brown and well risen. Enjoy your pie with steamed potatoes and vegetables.
  3. Turkey a la King- 200 gms mushrooms, 1 onion roughly chopped,  500 gms diced cooked turkey, 400 ml of white sauce and salt and pepper. 250 gms peas. Make up the white sauce. Wash and slice the mushroom and when cooked through add mushrooms and any liquid to the white sauce. Fry the chopped onion in olive oil and when browned add to the white sauce. Add diced turkey to the white sauce and stir well. Cook peas in microwave and add to turkey and mushroom sauce. Enjoy with steamed rice.
